Fruits and Greens Salad with Flax Meal (Healthy and Delicious)

This is a very healthy and delicious salad with a wonderful combination of fruits and greens.This is an other wonderful way to use Spinach Greens and Avocado fruit ,along with other fruits in our diet.A refreshing salad for the hot summer time.

Let us see what makes this salad so healthy----------------

Main Ingredients :
-----------------------
Baby Spinach..........................3cups(fresh and rinsed)
Avocado.................................1/2 fruit (pitted & cubed)
Seedless Grapes......................1cup(cut in halves)
Cantaloupe..............................2cups(peeled,deseeded & cubed)

Seasoning Ingredients :
---------------------------
Red Vine Vinegar.....................4tsp
Olive Oil..................................2tsp
Lemon Juice............................2tsp
Pepper...................................1/4tsp
Paprika..................................1/4tsp
Salt........................................to taste

Garnish :
--------------
Flax Meal.............................3tsp/1tbsp

Preparation :
-----------------
Take the greens and fruits , rinse them under cold water and prep them.Make a bed of baby spinach in the bottom of the bowl.Now add the cubed cantaloupe pieces followed by cubed avocado followed by grapes to the bed of spinach.Place the flax meal on top of the salad.


Now take all the seasoning ingredients in a bowl and whisk them together to make a nice dressing.


Pour the dressing over the fruits and greens in the bowl and mix it with the tongs and serve it immediately.

Delicious and healthy Fruits and Greens Salad with Flax Meal is ready to be served.

Burmese Style Cucumber Salad

While I was looking for salads from Burmese Cuisine,I came across this simple and delicious Cucumber Salad.Immediately I tried and it was very tasty and delicious.This is a very nice way to make the watery cucumbers more tasty.I got this recipe from here and this recipe calls for use of fruit vinegar,as I did not have fruit vinegar ,I used red vine vinegar.

This is how we make this simple and delicious cucumber salad---------


Main Ingredients :
------------------------
English Cucumber........................1medium size
Celery.........................................1stick
Green Chilly................................2

Seasoning Ingredients :
------------------------------
Sugar.......................................1/2tsp
Red Vine Vinegar.....................2tsp
Sesame Seeds..........................1tsp(toasted)
Salt..........................................to taste

Preparation :
---------------------
Peel the cucumber and remove the seeds from it.Cut the cucumber into thin strips and place them in a bowl.Add sugar , vinegar and mix well and keep aside.

Now toast the sesame seeds and cool and crush them a little.Cut the green chillies and celery into small pieces and keep them aside.

When you are ready to eat add the celery pieces,cut green chilly ,toasted and crushed sesame seeds and salt to the bowl of marinated cucumber and serve.


Delicious Burmese Style Cucumber Salad is ready to be served.

Quick Vegetable Pasta(Eat as Salad or Main Course)

Cook the Pasta not the Veggies.This is a very quick and simple healthy pasta salad.After pizza , a very favorite dish for kids is pasta or noodles.Pizza is cheesy and Pasta is easy to eat . Pasta comes in different shapes,sizes and colors so it is a great attraction for kids.The pasta dish I am presenting here today can be eaten as a salad or can be eaten as a main dish.It works both ways.I call this a salad because I am using raw vegetables in it.

Let's get into the preparation of the dish-----------


Main Ingredients :
-------------------
Elbow Pasta.................1lb(use any kind)
Zucchini........................1(yellow/green)
Snap Peas.....................1cup
Cauliflower....................2cups
Kidney beans.................8oz can

Ingedients for Dressing :
-------------------------
Black Pepper Powder..............2tsp
Yellow Mustard Paste..............2tsp
Red Vine Vinegar.....................1tbsp
Olive oil...................................2tbsp
Thai Red Chilli Paste................1tsp

Preparation :
-------------
Cook pasta according to the package directions(add salt and oil in water while cooking pasta).While the pasta is cooking prep the vegetables.Wash all the veggies you are going to use and cut them in bite sizes.

Once the pasta is cooked al-dente drain the water from the pasta and add little olive oil to the hot pasta,immediately add all the vegetables you have cut, to the hot pasta and close the lid.The vegetables will get steamed with the heat of pasta.Remove the lid and add the rinsed kidney beans to the pasta.

Now take all the seasoning ingredients except chilli paste and place them in a bowl and whisk them well and pour over the pasta and vegetables.Stir the pasta well so that the vinegar-mustard-olive oil dressing blends well with the pasta.

Yummy vegetable pasta is ready to serve.If you want to make it more spicy add Thai chilly paste in the pasta for adults .

Note :

1) Use any kind of pasta.You can use whole grain pasta too .They all taste good with this recipe.

2)You can also add bell-peppers ,olives , broccoli and sweet corn to this dish.

3)Do not add any cheese to this dish.It tastes good without cheese because of the dressing.
