Tried and Tasted : Coconut Rice from Sailu's Kitchen

I have been thinking to make coconut rice for a very long time and somehow didn't get to it . I was looking through Sailu's Kitchen to try her recipes and send them to the Tried and Tasted Event ,I came across this yummy and delicious Coconut Rice with nice description and beautiful picture.I have some more recipes that I bookmarked from her website and will post them pretty soon.


For now enjoy this coconut rice-----------------



I followed the recipe exactly as she mentioned except that I used frozen coconut instead of fresh coconut.It turned out very good .

Baked French Fries(Healthy & Fatfree)

This is a very simple and easy to make recipe of healthy baked fries.My kids were asking for french fries and hence this quick home-made recipe. Let us get into the preparation of this yummy recipe-----------

Main Ingredients :
----------------------
Potato...........................1 large

Seasoning Ingredients :
--------------------------
Chat Masala...................2tsp
Curry Leaves..................few
Oil.................................to spread on the tray

Preparation :
----------------
Rinse the potato under water, peel the skin and cut into long sticks.Meanwhile preheat the toaster oven at 425 F.
Place the potato sticks in a bowl add chaat masala ,finely shredded curry leaves and mix well.


Now take a baking tray and line it up with foil and spread very little oil on the foil so that the fries do not stick to it.Spread the fries on the tray without overlapping and put the tray in the oven.Let it bake for 10 minutes.

 
After 10 minutes take the tray out and flip the fries to the other side and put it back in the oven and bake for 10 more minutes.Once done take the tray out.You can see the well baked fries.


Yummy and healthy french fries are ready to be served.


Note :
-------
1) I used very little oil(maybe 1.5tsp) to spread on the foil so that fries do not stick to the foil.

2) I did not add any salt to the fries as there is salt in the chaat masala.

3) I added only chaat masala and curry leaves for flavoring . You can add other herbs and spices too.

Healthy Whole Green Moong Kheer/Payasam and Participation Award from ShamaNagarajan

You might have noticed that I use very less sugar or no sugar in my sweet recipes.I use dates,honey or other fruits to sweeten my dishes.In today's recipe I used Agave Nectar.I never heard about it before until I came across this nectar in Gita's recipes.So I wanted to try this in my kheer recipe.It tasted very good without leaving any after taste on the tounge.I came across moong kheer in different blogs and everyone had a unique touch of their own in the recipes.Today's recipe is my version of a very simple and easy to make kheer with whole green moong daal.

I made this when we had friend's come over for dinner.I could not take step by step pictures but sure am going to explain it in steps.We all enjoyed the kheer and hope you would too.We enjoyed second servings too.

Let us get into the details of making this-----------


Main Ingredients :
-------------------
Whole Moong.................1cup
2% Milk..........................4cup

Seasoning Ingredients :
------------------------
Agave Nectar..................1/4cup
Ghee/Butter.....................1tbsp
Cardamom......................6(powdered)

Garnish :
----------
Cashew...........................few
Golden Raisins.................few

Preparation :
--------------
Wash the whole green-moong well and pressure cook for 4 whistles.

Place a heavy-bottomed pan on the stove on medium heat and pour the milk in it and let it boil.

Once the milk reaches boiling point add the cooked moong to it and reduce the heat and slow cook for 10 minutes so that the milk turns golden in color.

Meanwhile in a pan add the ghee and fry the cashews and raisins till golden in color and switch off.

Now add the agave nectar and cardamom powder to the kheer and stir well.Finally garnish with cashews and raisins and turn off the stove.

Yummy and healthy Whole Moong Kheer is ready to serve.It can be served hot or cold.

Note:
------
1) I used 2% milk ,you can use milk of your choice.

2) I used agave nectar for sweet,you can use sugar ,honey ,jaggery or dates to sweeten your kheer.

3) We prefer less sweet so I used1/4 cup of sweetener,you can adjust sweet according to your taste.

Vegetable and Papaya Pizza(Healthy and Lowfat)

This is one more kid-friendly pizza recipe with Indian flavors. Very simple and easy to make and ready in 5 minutes. In this pizza I added different vegetables and fruits too. Again the base for the pizza is an onion naan . My kids had fun adding toppings to the pizza and loved eating it too.

Let's get started with the pizza-----------------------------


Main Ingredients :
-------------------
Onion Naans........................................2
Pineapple Salsa....................................2tbsp
Green Pepper......................................small(diced)
Red Onion...........................................small(diced)
Tomato...............................................small(diced)
Lowfat Mozarella Cheese Stick............1(diced)
Papaya Fruit........................................1cup(diced)

Seasoning Ingredients :
------------------------
Chat Masala...............................for sprinkling on the pizza

Preparation :
-------------
First wash the vegetables and cut them into small pieces and keep aside.Cut the cheese stick into small pieces too.Now preheat the toaster oven at 450 F.


Place the naan on a plate and spread one tablespoon of pineapple salsa on the naan.

Now place the cheese pieces on the naan.


Now top the naan-pizza with  diced red onion  and green pepper.


Later top it with diced tomato pieces and sprinkle chaat-masala .


Now place the naan-pizza in the toaster oven and cook  for 3 min.Now turn the knob to broil and let the cheese and veggies broil for 1 or 2 minutes.




Voila! Yummy Veggie Pizza is ready.





  Veg-Papaya Pizza

For this veg-papaya  pizza prep the naan just like above with the rest of the pineapple salsa and veggie toppings.Finally top the pizza with diced papaya pieces and sprinkle chaat masala.


Now place it in the toaster oven at 450 F and cook for 3 minutes and now turn to broil and cook for a minute or 2 and yummy Veg-Papaya pizza is ready.


We have pineapple(salsa)  and papaya in this pizza for a sweet touch.We all enjoyed this new fruit topping in our naan-pizza .Hope you too try it and enjoy it.

Instant Multi-Grains Idli and Dosa(Healthy and Lowfat)

I started preparing batter for ravva dosa and ended up making this idli as everyone in the house voted for idli.This idli was very tasty.It is a very healthy and fatfree dish prepared instantly.

Let us get into the preparation of the recipe-----------------


Main Ingredients :
------------------
Wheat Flour........................2cups
Sooji Ravva......................... 1.5cups
Rice Flour............................1/2cup
Instant Oats.........................1cup
Ragi Flour............................1cup
Yogurt.................................2cups
Cashew Halves....................1/4cup
Water.................................as needed
Salt......................................to taste
Baking Soda........................ 1tsp
Oil......................................for greasing idli plates

Preparation :
--------------
Take a bowl and place all the above ingredients in it and make a batter to get a little thicker than a pouring consistency.Let the batter rest for 30 minutes.


While the batter is resting grease the idli plates .Now pour the batter into the oiled plates and steam for 15 minutes in a idli cooker or a pressure cooker or in any vessel in which you can place the idli stand .


Turn off the heat and let sit for 5 minutes. Remove the idlis from the cooker and serve them hot with karapodi(made with curry leaves), ginger chutney and dalia-coconut chutney.


I made few pancakes/dosas with the same batter and it tasted very good too.I did not add any oil while making the dosas.


Serve the instant multi-grain dosa with karapodi , ginger chutney and dalia-coconut chutney.

Drumstick/Munagakaya Curry(Healthy and Lowfat) & Awards from Pavithra Srihari

This is a simple and easy recipe with Drumsticks.My kids love anything made with drumsticks as they like to  chew on them for a long time.Particularly in Andhra we use it in rasam,sambar,majjigapulusu(kadi) as well as in curries.Even a nice and tasty pickle(Achar) is made out of these drumsticks in Andhra.Drumstick as well as drumstick leaves are very good for health.

Today I am showing the preparation of a simple Drumstick Curry----------------


Main Ingredients :
-------------------
Frozen Drumsticks..........................15 pieces(thawed)
Green Pepper.................................1small
Tomatoes.......................................2
Onion............................................1small
Green Chillies................................3

Seasoning Ingredients :
-----------------------
Canola Oil.................................2tbsp
Ginger......................................1inch piece
Garlic.......................................3cloves
Poppy Seeds............................1tsp
Coriander Seeds.......................1tsp
Cumin Seeds.............................1tsp
Turmeric..................................1/2 tsp
Paprika Chilly Powder..............1/2tsp
Salt.........................................to taste

Garnish :
----------
Cilantro

Preparation :
-------------
I thawed the frozen drumsticks and then cooked them in the cooker for 2 whistles.While the pressure was cooling down I cut the green pepper into 2inch size pieces and diced the onions and tomatoes into small pieces.

Place a pan on the stove on med-high heat and pour the oil into it.Once the oil is heated up add half the onion pieces in it and fry till they turn golden.

Now add all the green pepper and turmeric to the onions and stir well.

While that is cooking make a paste of the ginger,garlic,poppy seeds,cumin seeds and coriander seeds.Now add this paste to the pan and stir well .Add a pinch of salt and cook it till the raw smell is gone.

Now blend the tomato pieces and rest of the onion pieces and add this paste to the pan of spiced veggies and stir well and cook.

Now take the drumsticks from the cooker and add them to the spiced veg mix in the pan.Add paprika and salt and let it cook till all the spices blend in well.Garnish with cilantro.

Yummy Drumstick curry is ready to be served with hot rice.

Bottlegourd and Tomato Rice(Healthy & Lowfat)

Today I am going to share one more healthy and lowfat one pot meal.It is very easy to make and is ready in very less time.This is a combination of bottlegourd and tomato.Most of the time we make chutney with these 2 veggies but this combination for making a flavorful rice is also another great outcome.

Let us start making this recipe-----------------------


Main Ingredients:
-----------------
Ponni Raw Rice.............................1.5cups(uncooked)
Bottlegourd(Med)...........................1/2 piece
Tomatoes........................................3

Seasoning Ingredients :
------------------------
Canola Oil....................................2tbsp
Cumin Seeds................................2tsp
Bay Leaves..................................2
Cashew Nuts...............................1tbsp
Turmeric......................................1/2tsp
Cardamom...................................4
Cloves........................................6
Nutmeg.....................................1/2piece
Cinnamon Stick.........................1(small)
Garam Masala...........................1tbsp
Salt............................................to taste

Garnish :
---------
Cilantro...........................few leaves

Preparation :
-------------
Cook the rice and keep it aside.While the rice is cooling down let us prepare the bottlegourd-tomato masala.Rinse the vegetables and cut them into big chunks .


Place a pan on the stove on med-high heat add oil and let it heat up.Now add cumin seeds,cloves,cardamom,cinnamon stick,bay leaves ,nutmeg and cashews to the oil and fry them till they are golden in color.

Now add finely chopped or grated bottlegourd(do not remove the peel) and turmeric to the spices and fry till the raw smell is gone.


While that is cooking finely chop the tomatoes in the chopper.


Once the bottlegourd is lightly cooked add the chopped tomato to the pan and stir well.Let it cook till the rawness in the tomato is gone.


Once the bottlegourd-tomato mix is well cooked add salt and garam masala to the mix and give a nice stir and let cook for a minute.


Now add the cooked  warm rice to the vegetable mix and stir well.Garnish with cilantro.


Yummy Bottlegourd-Tomato Rice is ready to be served.Can be served as is or with some papad and yogurt.


Try this rice and let me know how you like it.

Note :
--------
1)I did not add any ginger-garlic paste to this rice.

2)Rinse the bottlegourd nicely.Keep the peel of the bottlegourd do not remove it if it nice and tender.Peel has lot of nutrients in it.
