This is a very easy and healthy curry done in 15 minutes.I feel that Zucchini tastes like Ridgegourd and I prepare it in all the different ways I prepare Ridgegourd.I use zucchini in salads,for making chutneys,rice dishes and also in making different curries with it.I make zucchini curry with sesame powder,spiced lentil powder, with milk,with cilantro seasoning.Lot of varieties,of all minapappukaram is my favorite seasoning(I got the recipe for this spicy powder fro my mom),today I am going to make zucchini with spiced lentil powder known as minapappukaram in Telugu langauge.
Let us start making it-----------------------
Main Ingredients :
-------------------
Zucchini........................................................4(2yellow & 2green)
Spiced lentil powder/Minapappukaram...........2tbsp
Seasoning Ingredients :
------------------------
Canola Oil....................................................1.5tbsp
Mustard Seeds..............................................1tsp
Cumin Seeds.................................................1tsp
Turmeric.......................................................1/2tsp
Salt...............................................................to taste

Preparation :
--------------
First rinse the zucchini well and cut it length wise into 2inch pieces.Place a pan on the stove on med-high heat and pour oil into it and once the oil is hot add mustard and cumin seeds and let them splutter.
Now add Zucchini and turmeric to the pan and stir well and let cook covered for 5minutes.
Now the zucchini will start to leave water.So cook it uncovered on high heat for few more minutes till water reduces.Once the water reduces a bit add the spiced lentil powder(minapappukaram) and salt to the cooked zucchini and stir well.
Let it cook for few minutes till the spices and salt blend well with the zucchini and garnish with cilantro.It's okay if a little water is in the zucchini.
Yummy Zucchini with Spiced Lentil Powder(Minapappukaram) is ready to be served with hot rice or rotis.
