The title itself explains it.Today I am sharing with you a Pulihora dish that has vegetables in it.I saw that I had an unopened pack of MTR Puliyogare spice powder that I bought a few months ago in my pantry.So I decided to make use of it and made this unique dish.
My kids love pulihora, but the problem is everytime they eat pulihora they just eat it with yogurt and no vegetables are in their diet for that meal.So this time I decided to add Dondakaya or Tindora to the pulihora so that some veggies will be there in their meal.Adding tindora to this dish made it very tasty and did not alter the taste of the dish.We all enjoyed it.Next time you make pulihora try adding some veggies too.

Main Ingredients :

Ponni Raw Rice......................2cups(uncooked)
Dondakaya/Tindora...............1/2 lb
Onion....................................1
Seasoning Ingredients :
----------------------------
Canola Oil..............................1tbsp
Cumin Seeds..........................1/2tsp
MTR Puliyogare Mix..............2tbsp
Lemon Juice...........................1tbsp
Curry Leaves.........................few sprigs
Preparation :
--------------------
Cook the raw rice and keep it aside to cool.While the rice is cooling down , rinse the tindora under water and cut them length wise. Place a pan on the stove on medium-high heat and add oil to the pan.Once the oil heats up add the cumin seeds , tindora and onion and stir fry them.
Once the tindora is cooked(do not over fry, just cook till the rawness is gone) add the puliyogare powder to the tindora and mix well.
Now add the cooked rice to the pan and mix well so that the tindora and pulihora powder mixes well with the rice.
Now add lemon juice to the pulihora rice and mix well.Finally garnish with curry leaves.
Super Delicious Dondakaya/Tindora Pulihora is ready to be served.
Note :

1) Make sure the vegetables still retain their color and crispness.Don't over cook them.
2) I did not add any salt to the veggies or to the rice as there is enough salt in the MTR Puliyogare Powder to flavor the dish.If you want to you may add some to your taste.
3) I added just enough oil to cook the veggies ,did not add any additional oil to the rice as the spice powder already has enough in it.
4) Adding lemon juice made the rice more flavorful and the tindora tasted nice and lemony.
