This is a very healthy and delicious chutney with mint.Coconut and mint make a tasty combination.This is very healthy and quick to make as well.

Main Ingredients :

Fresh Mint.......................1cup(packed)
Coconut...........................1/4cup(packed)
Seasoning Ingredients :
-------------------------
Canola Oil........................1tbsp
Cumin Seeds....................1/2tsp
Mustard Seeds.................1/2tsp
Chana Daal.......................1tsp
Urad Daal.........................1tsp
Red Chilly.........................1
Asafoetida.........................pinch
Turmeric...........................1/8tsp
Salt....................................to taste
Lemon Juice......................1tbsp
Preparation :
--------------------
Pluck the leaves from the mint stalks and rinse them in cold water and place them in the blender jar along with fresh coconut , turmeric , salt and lemon juice and blend them.
For seasoning place a pan on the stove on medium heat and add the oil,cumin seeds,mustard seeds, chana daal ,urad daal , red chilly and asafoetida and fry till it is golden.
Add the fried seasoning to the blender and blend one more time.Keep a little seasoning aside to garnish the chutney.
Delicious Mint-Coconut Chutney is ready to enjoy with hot rice and ghee or can be had with dosa or rotis too.

2) You can adjust the amount of mint,coconut and lemon juice to your taste.
