Simple Okra Stir Fry/Bendakaya Vepudu(Low Fat)

This is an other excellent and delicious dish from my Dear Husband . Okra is a favorite dish of our family.We all love to eat it in any form.

Let us see how this delicious curry is made in his words---------


Main Ingredients :
------------------------
Tender Okra.......................1.5 lb

Seasoning Ingredients :
---------------------------
Canola Oil.............................2tbsp
Mustard Seeds......................1tsp
Cumin Seeds.........................1tsp
ChanaDaal............................2tsp
Urad Daal.............................1tsp
Turmeric...............................1/4tsp
Paprika.................................2tsp
Lemon Juice..........................2tsp
Salt........................................to taste

Garnish
------------
Cilantro...............................few leaves

Preparation :
-----------------
Rinse the okra and towel dry it.Cut the okra into small pieces and keep aside.

Place a pan on the stove on high heat and pour oil.Add mustard and cumin let them splutter then add chana daal and urad daal .Once they are toasted add cut okra and turmeric and stir well.

Cook it covered for 3minutes.Remove the lid and stir well.You can see that the okra starts to gel,now add 2tsp of lemon juice to the okra and stir.Cook covered for 3 more minutes.

Now remove the lid and add salt to your taste and stir well and cook for 2 more minutes.Do not cover.

After 2minutes add paprika chilly powder to the okra and stir .Let it cook for 2 more minutes and switch off the stove.Garnish with chopped cilantro.

Delicious Okra Stir Fry is ready to be served with rice or rotis.

  8. Lemon juice in okra. Does it remove the sticky juices. I was told to add yogurt. Well thank your husband for this recipe.Will give it a try next time.

  9. Bendakaya vepudu is a family favorite. Next time when I prepare it, I will remember to add the lemon juice and check out the new flavor.
