Barley Jaava/Barley Kanji
As the summer sun starts to show it's intensity it is necessary for us to take foods that can keep our body cool and help us to beat the heat of the sun.One such healthy and traditional drink is Barley Jaava or Barley Kanji.Every summer my mother used to make this kanji almost everyday in our house.Barley has a very cooling effect on the body and help us from dehydrating and keeps the body cool .We used to like taking it with buttermilk which is again a nice coolant.

Main Ingredients :

Barley................................1/2cup
Water................................2cups
ButterMilk.........................3cups
Seasoning Ingredients :
-----------------------------
Salt....................................to taste
Preparation :

Rinse the barley and pressure cook it with water for 3 whistles.
Once the pressure settlees down remove the lid and cool the barley water.
Once the barley water is cooled pour the cooked barley and water into a blender and blend well.So that the barley pearls are nicely broken.Now add butter milk and blend one more time.
Now add some salt to the barley jaava/kanji and pour it into the serving glasses and serve.
This is a very good remedy to beat the heat and as well a very healthy food for anytime of the day.

If you like you can add few drops of lemon juice to this kanji and enjoy it.

Simple Sooji Upma
Andhrites are known for their love for Upma and Pesarattu.Last week DH Jay has volunteered to make this simple and delicious upma.Let us see how he made this recipe in his words-----------
Main Ingredients :

Cream of Wheat/Sooji..........1.5 cup
Water ..................................3 cups
Onion...................................1
Ginger..................................1inchChilli....................................3
Seasoning Ingredients :

Canola Oil........................3tsp
Ghee................................1tsp
Cumin seeds.....................1tsp
Mustard Seeds.................1tsp
Chana Daal......................1tsp
Cashews..........................1tbsp
Curry Leaves....................1sprig
Salt..................................to taste
Lemon Juice.....................few drops
Garnish :
------------
Cilantro..........................few leaves
Preparation :

Pour oil into the pan and make it warm, then add mustard seeds,cumin seeds, chana dal and wait for then to splutter and add cashew,ginger,chilli, and onion.
Stir for 2 to 3 min and then add water to the pan and wait a few minutes until the water comes to a boil. Then add salt and ghee and stir it once.
Now take sooji and add to the water slowly while continuously stirring the water so that no lumps are formed .
Once sooji is completely added let it cook covered for 3 minutes and garnish with cilantro.
Now delicious UPMA is ready to be serverd topped with few drops of lemon juice.You can have it as is or with a chutney or pickle of your choice.

Beets and Mixed Vegetable Curry
This is an other woderful recipe from my brother Seri.Long before I posted a tri-color yogurt rice recipe that I made following his recipe.He sent me his recipe last week.Let us see how this curry is made.Here it is in his own words-------------
My Recipe Requires :

Beets....................2
Onion...................1
Frozen beans.........100 grams
Frozen peas............half-cup
Frozen mix of carrots, broccoli and cauliflower...........250 grams
Seasoning Ingredients :

Oil...........................................................................2tbsp
Minapappukaram/Spiced Lentil Powder....................1tbsp(Recipe is here)
Salt..........................................................................to taste

First I put oil in the pan, then added onions and fried them a bit then added beets and slow cooked them for 10 mins and then added my frozen vegetables and cooked them until they reached the right consistency and then added salt and minapa pappu karam and cooked everything for 15 mins more.
Well, I also garnished the curry with some shredded carrot and mint leaves on top, as is obvious from the pictures :)

Cabbage-Tomato Curry
This is a very tasty and delicious cabbage dish.This entry is very special on SUMADHURA as this recipe comes from my dear husband Jay(A man of many talents and few words). Enjoy this recipe . In his words this is how this recipe goes.....................
Main Ingredients :

Cabbage...............1 med
Tomato.................1
Seasoning Ingredients :

Oil..........................2tbsp
Mustard..................1tsp
Cumin.....................1tsp
Turmeric.................1/8tsp
Paprika...................2tsp(to your taste)

Preparation :

To make this curry cut /shred cabbage into fine pieces.Dice the tomato and keep it aside.
Place a pan on the stove on medium high heat add oil .Once the oil is heated up add mustard,cumin and turmeric.Once the seeds splutter add diced tomato to the pan and stir.
After 2minutes stir it and add shredded cabbage to the pan.Stir well and cook covered.After 5 minutes check if the cabbage is done and add salt and stir well.
Cook for 2 more minutes and add paprika chilly powder.Stir it cook for 1 more minute and turn off the stove.
Delicious cabbage tomato curry is ready to be served with rice or roti.

Healthy Vegetable Couscous(Low Fat Or Fat Free)
This is a very simple,healthy,delicious and quick to make dish. A very healthy combination of colorful vegetables and couscous.Done in under 15 minutes can be had for breakfast,brunch,lunch or dinner.Whole family will enjoy this healthy couscous dish.

Main Ingredients :

Whole Wheat Couscous...................1/2 lb
Yellow Zucchini................................1(small)
Green Bell Pepper............................1(medium)
Onion...............................................1(small)

Tomato.............................................1(medium)
Mushroom........................................6 oz
Olives..............................................1/4 cup
Seasoning Ingredients :

Minapappukaram/Lentil Powder............................1tbsp or per your taste(Recipe for this powder is here)
Canola/Olive Oil.............................1.5tbsp
Red Pepper Flakes.........................1tsp

Dried Sweet Cranberries.................1tbsp
Preparation :
----------------------
Place a pan on high heat and add oil.Once the oil is hot add onion,zucchini,green pepper and mushroom and fry on high heat for 3 minutes .You don't want the vegetables to get soggy or over cooked.
Now add olives and tomatoes and fry for a minute.You can see that this dish is almost fat free,if you look at the pictures you can see that I used oil to just coat the pan.
Now add crushed red pepper,salt and minapappukaram/spiced lentil powder to the vegetables and stir well.
While the vegetables were cooking I boiled water in the microwave and added couscous to it and covered it.After 5 minutes I fluffed it up and added to the vegetable mix and stir well .
Finally garnish with dried sweetened cranberries.
Voila ! Healthy and delicious vegetable couscous is ready to be served.
We enjoyed this with home-made cauliflower pickle and seasoned green chilly.Will soon post the recipe for seasoned green chilly.

Tasty and Healthy Juices on Thursdays: Juice Recipe 3 & Juice Recipe 4
Today is Thursday and I am back with 2 more juice recipes that we have tried and tasted at home.As I stated earlier these juices tasted good for us and we enjoyed them but before you try them at home check if all these ingredients and combinations are fine for you or not.
Let's get introduced to them----------------
Juice Recipe 3 :
------------------------
I told my son that he gets to choose what fruits and vegetables go into the juicer so that he enjoys every drop of the juice when he drinks it and he did . He really came up with this yummy and healthy combination of fruits and vegetables that the juice was outstandingly delicious.Thanks to him we had a delicious treat for the day.
These are his choice of fruits and veggies-----------------
Oranges.........................4
Pears.............................2
Apples...........................2
Carrots..........................2
Yellow Zucchini.............1
Lemon Juice..................1tsp
Rinse all the fruits and veggies under cold water . Peel the oranges and cut the tips of the fruits and veggies.Now juice the soft fruit followed by hard fruit so that you can squeeze every bit of juice from the soft fruit.Once you are done juicing all of them add lemon juice mix well and serve the juice immediately.This juice was super-duper delicious.
This yielded 4 large glasses of juice.It was yellow in colour.
Juice Recipe 4 :

This was a recipe that my daughter wanted to try . When she was asked to choose the fruits and vegetables she would want to be in the juice she got all the fruits that were in her sight and opted for beetroot and carrot. When asked why she wanted beetroot--she says "purple is my favorite color so I would like to add beetroot as it is purple".
These are her chioice of fruits and veggies in the juice---------
Grape Fruit.....................2
Oranges..........................2
Apples............................2
Pears..............................2
Carrots...........................2
BeetRoots.......................2
Ginger.............................1inch
Lemon Juice....................1tsp
Rinse all the fruits and veggies in cold water.Peel the grapefruit , orange and beet root . Juice soft fruit followed by hard fruits and veggies.Finally juice the ginger.Now add lemon juice to the squeezed juice mix and serve.
This yielded 5 large glasses of juice.The juice was purple in color.

1) This juice was nice to taste but I would avoid combining beets and grapefruit together.Next time I would add either one of them and try .

Pear and Pom Whole Wheat Cake(Eggless and Vegan)
This yet another healthy cake with whole wheat and as usual eggless.Again thanks to my daughter for being behind me till I made this cake.As I mentioned earlier clearing the oven(as I use it for storage) for baking is a big task but my daughter makes sure that I keep baking once in a while as she loves cake.
Today I had to come up with something with the ingredients in hand and I ended up making this healthy cake with pear fruit , pom juice , flax meal and whole wheat flour as main ingredients.
Dry Ingredients :
--------------------------
Whole Wheat Flour..........................2cups
Flax Seed Meal................................1/2 cup
Baking Powder.................................1tsp
Baking Soda.....................................1/2tsp
Sea Salt............................................1/2tsp
Wet Ingredients :
--------------------------
Pom Juice........................................1&1/4 cup
Canola Oil.......................................1/2 cup
Agave + Raw Agave Nectar............2tbsp + 2tbsp
Pear Fruit.........................................1 finely diced
Garnish :
-----------------
Toasted Unsalted Cashews...............1/4cup
Butter/Ghee......................................for greasing cake pan
Preparation :
---------------
Turn the oven to 350 F.While the oven is preheating let us get the cake batter ready.Grease a cake/loaf pan and keep it ready.In a bowl take 2 cups of whole wheat flour(atta flour).Add baking powder , baking soda and salt and mix well or sift them together so that all the powders mix in well.
Now pour the wet ingredients into the dry ingredients and blend with the hand mixer.To this batter add the finely diced pears and whisk one more time so that the fruit blends in.
Now pour this batter into the greased pan and top it with roasted unsalted cashews and place it in the oven and bake for 50 to 60 minutes.Each oven is different so check in between.Mine took 60 minutes.
After 50 minutes test the cake with a tooth pick to see if it is done ,if not continue for few more minutes and check again.If the tooth pick comes out clean it's done.
Take the cake out of the oven and let it cool. It took more than 30 minutes for this cake loaf to cool down.I thought it must be because of the fresh fruit(pear) I used in it.
My daughter couldn't wait so long and made me cut it after 10minutes.It was still hot and moist whereever there were pieces of pear.It tasted very good.Once cooled it tasted more yum.
Note :

1) This cake will be good for 2 to 3 days if kept outside(without refrigeration) I guess as there are fresh fruit pieces in it.
2) Will surely make it again.Next time I will make it by using pasted pears instead of adding them as pieces.
3) I forgot to take a picture after adding the pears to the batter.You can see that in the cut cake piece there are some white spots, that white spots are pear.
