Tasty and Healthy Juices on Thursday's: Juice Recipe # 15

Today is Thursday and it's time to share another delicious and healthy juice that I tried this week.The juice I am sharing with you today is a very delicious combination of fruits and veggies.These days we have been enjoying watermelon juice a lot and other fruits kind of took a back seat.But today I am sharing with you a recipe combination that we tried and enjoyed which also had watermelon.

This is how I made this juice--------------------------

Juice Recipe # 15 :

----------------------


We need the following ingredients for making this juice----------------
Watermelon....................1big chunk (without green rind)
Red Apples....................5
Celery............................1bunch
Ginger............................1inch (optional)

Preparation :
-------------------
Rinse the fruits and veggies under cold water.In a juicer always try to juice the soft fruit or veggies followed by hard fruits or veggies so that you can get the maxium juice out of the soft fruits or veggies.First juice the celery sticks followed by watermelon followed by apple followed by ginger.Stir the collected juice in the bowl with a ladle so that all the juices blend in and serve the juice immediately.

This yielded 3 large glasses of juice.The juice was brick-red in color.

2) A food that is healthy for one person may or may not be healthy for an other person.Always check with your doctor before you try these raw juices.

Green Jackfruit Rice/Panasapottu Rice/Raw Jackfruit Pulao

It has been a very very long time that we tasted the raw jackfruit.Recently when I went to Indian grocery store, I saw that they were having frozen Green JackFruit.I wasn't sure how it would be inside the pack but still bought it planning to make the famous Panasapottu Kura or Raw Jack Fruit Curry that is very famous in traditional vegetarian families in AndhraPradesh.

Few days after getting it ,I opened the pack and to my dismay the contents inside looked more like the fruit of the jackfruit than the light yellowish green chunks that I expected.Still planning to make the curry I thought I will use the mixie jar to pulse it into shreds.After pulsing the chunks in the mixie jar twice, they ended up mushy instead of shreds,this was not suitable for making the curry.So I pulsed it 2 more times and made a paste of it and changed my plans from making curry into rice dish.This Jackfruit rice turned out very tasty and we all enjoyed it.

Let's see how this delicious Green Jackfruit Rice/Pulao is made--------------


Main Ingredients :
----------------------
Raw Rice..........................2cups
Green Jackfruit..................1pkg(frozen)
Onion................................1
Green Chilly.......................3

Seasoning Ingredients :
----------------------------
Canola Oil..............................1.5tbsp
Cumin Seeds..........................1tsp
Ginger....................................1inch
Garlic.....................................3cloves
Cinnamon...............................2inch piece
Nutmeg..................................small piece
Cloves....................................6
Cardamom.............................6
Peppercorns...........................10
Bay Leaf................................3
Paprika..................................1tsp
Cashewnuts............................1tbsp
Curry Leaves..........................few
Salt........................................to taste

Preparation :
--------------------
First cook the rice and keep it aside to cool down.Now take the frozen green jackfruit pieces and keep them outside.Once they are soft place them in a mixie jar and make a paste of it.In a plate take the seasoning ingredients like cumin, bayleaf, peppercorns, cloves, cardamom, cinnamon and nutmeg and keep them ready.


Now place a pan on the stove on high heat and add the oil.Once the oil heats up add the seasoning ingredients in the plate,chopped onion and slit green chillies and cashews to the pan and fry for 2 min or till cashews are golden and onions are translucent.
 

Make a paste of the ginger and garlic and add it to the cooked onions.Also add salt and paprika and fry the ingredients in the pan till the rawness of the ginger garlic paste is gone.

 

Now add the ground jackfruit paste to the pan.Mix the green jack fruit paste well with the seasoned ingredients in the pan so that all flavors blend in and fry for 2 minutes or till the raw smell is gone.


Once the raw jackfruit paste is well cooked add the curry leaves to it and give a stir.Finally add the cooked warm rice to the pan of seasoned jackfruit paste and mix well till all the rice gets coated with the mix.Adjust salt as needed(we already added some salt to the paste when we added paprika).


Very delicious and tasty Green Jackfruit Rice/Pulav is ready to be served.


We enjoyed this rice along with tomato and onion slices.Sure will make it again.

Tried and Tasted on Tuesday's(3T's) : July 27th 2010

Dear visitors of SUMADHURA , the last few days have been kind of stressful as I had a sprained neck and shoulder and could not post anything on the blog , but I sure wouldn't miss the Tuesday's.Today I am back with 3 delicious recipes that I tried and tasted from 3 wonderful bloggers.Without any further delay here are the tried and tasted recipes----------------



I followed the recipe as is and it tasted very delicious.It is just right for the hot summer days.My kids enjoyed every sip of it.Thank you Anjum for sharing this delicious milkshake with us.



I wanted to make this pudding since I saw it the day she posted.Finally I could make it and post it here in tried and tasted.I did not have mango fruit at home,so I used mango pulp instead.As I used sweetened pulp I did not add any sugar to it.Rest I followed the recipe as is and was very yummy.Thank you Krishnaveni for sharing this perfect summer time recipe with us.



Coming to the 3rd recipe I tried ,there is a small story behind making this chaat.Sabudana Kichadi bangaya Sabudana Chaat.

I was planning to make sabudana kichadi for dinner last night.I soaked the sabudana and after 40minutes of soaking it , I observed that the sago was becoming powdery.So I touched the pearls and felt that they were already soaked and are breaking down.I immediately started making the kichadi but was doubtful about the outcome of it.Once I added the sago to the pan of seasoning the tapioca started breaking and became soggy.The kichadi was all mushy.I did not want to use it for dinner and instead let it cool down and thought of adding yogurt to it and make it like sabudana raita.I tried this with a cup of kichadi and added yogurt to it.It tasted very delicious but my kids did not approve of it.So I started googling for some interesting ways to use this mushy kichadi.

While googling I came across this interesting recipe from Nisha's Kitchen---it was Sabudana Aloo Tikki Chaat.She saved my kichadi.......I mean her innovative recipe helped my kichadi to become a tikki.She used leftover kichadi and I used the fresh kichadi.

I followed the recipe as is except for small changes----------

For making the kichadi , I used 4 cups sago , 2 boiled potatoes ,few cashews instead of crushed peanut , cumin , curry leaves , cilantro, 3chillies cut fine,salt and 3 tbsps of oil.


For making tikkis , following Nisha's recipe I added 2 more boiled potatoes to the above kichadi and added a teaspoon of paprika,salt to taste and 1/4 cup of kasoori methi and mixed all of them togehter and made small patties and placed them on the hot tava and cooked on both the sides till they are golden on both the sides.(I just coated the pan with 1teaspoon of oil before placing the tikkis on the pan,did not use anymore oil for frying them).


Additionally to make this chaat I followed the recipe for the yogurt dressing as Nisha mentioned in her post and served the sabudana tikkis with this delicious yogurt dressing.

Note :
----------
1) I did not use any oil to pan fry the tikkis.

2) Along with the yogurt dressing we enjoyed these tikkis with chaat masala and sweet chutney too.

Tasty and Healthy Juices on Thursday's: Juice Recipe # 14 and Watermelon Halwa from Juicer Pulp

Today is Thursday and I am sharing with you a juice recipe and a halwa recipe that I tried yesterday.Juice recipe is not new as I already shared it with you before except a small change.The main recipe that gets the attention today is the Watermelon Halwa that I tried.

In my family we are not much fans of sweets except my daughter.We enjoy few sweet dishes that are traditional and also we prefer to have very less sweet in the sweet dishes.I should really thank Nivedita for starting the Halwa event ,because only after her announcement , for the 1st time I  made Apple-Pineapple-Ginger Halwa and the 2nd one is the Watermelon Halwa.Both these dishes were very tasty and at the same time healthy and can be enjoyed without guilt.I made both these halwas with the fruit pulp that remained after juicing ,so it is a great way to get nutrients from the peels and rinds of the fruits without wasting them or trashing them.

Juice Recipe # 14 :

I already shared this recipe with you before(Juice #7) except that in this juice we are not adding ginger.The only ingredient needed for this juice is ---------

Watermelon............3/4th of a big water melon

Preparation :
-----------------
Rinse the watermelon and remove the outer green rind.You can leave the white part on,so that while juicing you get the nutrients from the white pith of the watermelon as well as the fruit part.Now cut the melon into big chunks and run it through the juicer.As watermelon is a soft fruit, while juicing some of the pulp with juice will end up in the pulp container of the juicer.You can run this pulp through the juicer again to squeeze the rest of the juice out of it or instead use the pulp to make a delicious halwa that I am going to share with you now.

This yielded 5 large glasses of juice.The juice was red or dark purple in color.

WaterMelon Halwa from Juicer Pulp

This is another halwa that I tried yesterday.After making the watermelon juice ,some pulp was left .Everytime I rejuice it and make juice from it.This time I did not want to rejuice.Instead I made a halwa out of it and the end result was a very delicious watermelon hawa.Will definitely make this again.

This is how I made this delicious Watermelon Halwa-------------------


Main Ingredients :
-------------------------
WaterMelon Pulp..........................2cups(pulp from Juice Recipe #14)
Agave Nectar...............................4tsp
Milk Powder................................1/4cup(non-fat dry)

Seasoning Ingredients :
--------------------------
Ghee/Clarified Butter.................... 4tsp

Garnish :
--------------
Cashew Pieces.............................2tsp(roasted,unsalted)

Preparation :
------------------
Place a non-stick or thick-bottomed pan on the stove on medium-high heat and add 2tsp of ghee to it.


Once the ghee is hot add the watermelon pulp obtained from the jucer to the hot ghee and keep stirring it till the juices in the pulp are reduced and the pulp gets thicker.


After almost 20mins I put the stove on high for 5 minutes continuously stirring ,that helped the juices to reduce otherwise it would have taken longer.


Once the pulp is reduced to almost 1cup ,now add the agave nectar and stir well.


Now add the nonfat dry milk powder and mix well so that no lumps are formed.


Now add the other 2tsp of ghee to the pan and mix well.


Finally add the toasted unsalted cashew pieces to the halwa ,mix well and let it cook for 1 more minute and switch off the stove.


Delicious and healthy WaterMelon Halwa is ready to be served.


Note :
------------
1) The end result was a delicious cup of halwa.

2) Will definitely make it again but next time will use only 2tsp of agave.

Dondakaya Pulihora / Tindora Pulihora

The title itself explains it.Today I am sharing with you a Pulihora dish that has vegetables in it.I saw that I had an unopened pack of MTR Puliyogare spice powder that I bought a few months ago in my pantry.So I decided to make use of it and made this unique dish.

My kids love pulihora, but the problem is everytime they eat pulihora they just eat it with yogurt and no vegetables are in their diet for that meal.So this time I decided to add Dondakaya or Tindora to the pulihora so that some veggies will be there in their meal.Adding tindora to this dish made it very tasty and did not alter the taste of the dish.We all enjoyed it.Next time you make pulihora try adding some veggies too.

Main Ingredients :
-------------------------
Ponni Raw Rice......................2cups(uncooked)
Dondakaya/Tindora...............1/2 lb
Onion....................................1

Seasoning Ingredients :
----------------------------
Canola Oil..............................1tbsp
Cumin Seeds..........................1/2tsp
MTR Puliyogare Mix..............2tbsp
Lemon Juice...........................1tbsp
Curry Leaves.........................few sprigs

Preparation :
--------------------
Cook the raw rice and keep it aside to cool.While the rice is cooling down , rinse the tindora under water and cut them length wise. Place a pan on the stove on medium-high heat and add oil to the pan.Once the oil heats up add the cumin seeds , tindora and onion and stir fry them.


Once the tindora is cooked(do not over fry, just cook till the rawness is gone) add the puliyogare powder to the tindora and mix well.


Now add the cooked rice to the pan and mix well so that the tindora and pulihora powder mixes well with the rice.
                                         

Now add lemon juice to the pulihora rice and mix well.Finally garnish with curry leaves.


Super Delicious Dondakaya/Tindora Pulihora is ready to be served.


Note :
-----------
1) Make sure the vegetables still retain their color and crispness.Don't over cook them.

2) I did not add any salt to the veggies or to the rice as there is enough salt in the MTR Puliyogare Powder to flavor the dish.If you want to you may add some to your taste.

3) I added just enough oil to cook the veggies ,did not add any additional oil to the rice as the spice powder already has enough in it.

4) Adding lemon juice made the rice more flavorful and the tindora tasted nice and lemony.
