Apple-Orange-Cucumber Halwa from Juicer Pulp

Yes ,you  read ir right.Halwa with veggies like carrot and beetroot is no surprise to any one. They sure taste heavenly.Well , halwa with a veggie like cucumber is sure not heard or tasted ever by me.Now, I know that it is possible and sure tastes yum.

Coming to my recipe today ,I was sceptic about making this halwa at first because I was worried that orange pulp and cucumber pulp might give a bitter taste to the recipe.Anyway what is the harm in trying it,so I started out to make the halwa without adding too many ingredients so that the original  flavors of the fruit and veggie pulp could be tasted.I am very glad that I tried this recipe and we sure enjoyed every bit of it.

This is how I made it-------------------

Main Ingredients :
---------------------
Apple-Orange-Cucumber Pulp......................1.5cups(from Juice Recipe #17)
Agave Nectar.............................................3 tbsp
Milk Powder..............................................1/4 cup (non-fat dry)

Seasoning Ingredients :
--------------------------
Ghee/Clarified Butter.................... 4tsp

Garnish :
--------------
Cashew Pieces.............................2tsp(roasted,unsalted)
Cardamom...................................4(crushed)

Preparation :
-----------------
Take the collected pulp after juicing and grind it in the blender jar to get the pulp into a smooth paste.I got 2 cups of pulp.

Collect the blended pulp in a bowl.Place a non-stick or thick-bottomed pan on the stove on medium-high heat and add 2tsp of ghee to it.

Once the ghee is hot add the apple-orange-cucumber pulp obtained from the jucer to the hot ghee in the pan and cook it stirring occassionally till the rawness is gone.

Once the pulp is cooked and starts to get brown spots , slowly add the agave nectar and stir it well.

Once you are done adding the agave, add milk powder and stir well .Make sure there are no lumps of milk powder and cook for 2more minutes.

Now add the other 2tsp of ghee , toasted unsalted cahews and cardamom powder to the halwa ,mix well and let it cook for 1 more minute and switch off the stove.

Delicious and healthy Apple-Orange-Cucumber Halwa is ready to be served.

Note :
-----------
1) It was delicious when served warm as well as when served cold.

2) I made small balls with the halwa as it will be handy for the kids to eat.My kids loved this combination so much that it vanished in no time.

3) This is a great way to use the juiced pulp without wasting it.

4) I blended the pulp in the mixie jar because the pulp contains all the peels and the fiber from the fruits and they are in uneven consistency, blending heps them to get into even texture and it makes cooking easy.

5) Will definitely make it again.

Tried and Tasted on Tuesdays(3T's) : August 24th 2010 and Happy Rakshabandhan

Hello Everyone, I am sorry that I haven't been regular with my posts for the past few weeks due to lots of reasons. It all started with my hand and shoulder pain ,then there were some un-planned day trips to the zoos and entertainment parks the kids asked for before the school starts and then was also busy getting things ready for back-to-school for the kids.Well that's enough of excuses :-) .

The last 2 months were very relaxing for the kids and for me too.Once the school starts next week the hustle and bustle of the day starts. This year my little one will be joining school and will be going with her brother to the school,so it's very exciting and the same time wondering how she will do at school in the new environment.I know she will be fine. She is excited to go to school with her brother.Big brother taking care of the little sister at school ,he is already telling her how she has to be at school and what she is going to learn and who her teacher might be.She is busy enjoying her new uniform, backpack and lunch-bag and lunch box and water bottle. It's amazing how days pass by so quickly. It's as if my son just started school yesterday and already my daughter is getting ready for pre-school :-)

Happy Raksha Bandhan

I felt happy and proud today when my son was telling his sister that school is fun and they make lots of friends there and that he is going to be there for her. What day would be better than today(Rakhi-Rakshabandhan) to share this special bond between a brother and sister.I told my son that today is Rakhi and  this is a special day when brother and sister promise to take care of each other.I told him that when his sister ties rakhi to him, he has to give a gift to her.He told me that he would  like to do something special for his sister and immediately went inside his toy room and started making something his sister likes--- a nice chain with beads for his little sister that said "Love U Sis" , I was very happy with his thoughtful gift.My daughter was very happy to see the beautiful surprise that her brother made for her.

18) Recipe Name : RAABDI

Here is one more recipe for breakfast or evening snack time. Its very popular in Rajasthan, its called RAABDI( don't confuse with rabdi :-) ).

Actually this can be made with any Grain(cereal).Mostly in winter with bajara or makka and in summer with barley. It can be made by oats .

Preparation :
----------------
Take one cup of barley and grind it (I mostly use my coffee grinder)coarsely. In a pressure cooker take 2-3 cups of butter milk (chach/mattha) and barley powder pinch of salt.Switch on flame and keep stirring the batter. When it starts boiling put the lid on and let 3 whistles come up.After cooker cools down open the lid and it should be as thick as idli dough consistency. It is ready to be served.

If you like to eat it hot then take milk in a bowl and add Raabdi and lil sugar like milk and cereal.

If you like it cold, then refrigerate it and in a bowl take one scoop of raabdi with some chaach (buttermilk) add salt or sugar according to your taste.

How to make Muthia :

• Combine all flour, salt and sugar in a big bowl.
• Add cumin seed powder, turmeric powder, crushed green chillies, crushed garlic, and crushed ginger.
• Mix properly and knead lightly. You can add some Eno or baking soda for soft texture (I don't normally
recomend to compro with vitamins and don't like to mess up with blood pressure)
• Shape into long thin rolls with your fingers or pour into idli molds.
• Steam for half an hour or until cooked. you can eat as is with any chutney/ketchup or for better taste. Heat oil, add ajwain seeds ,sesame seed ,posta (khuskhus),curry leaves and asafoetida.Add muthia and saute until brown.

Garnish with grated coconut and chopped coriander leaves.Enjoy with any chutney
