Pear and Pom Whole Wheat Cake(Eggless and Vegan)

This yet another healthy cake with whole wheat and as usual eggless.Again thanks to my daughter for being behind me till I made this cake.As I mentioned earlier clearing the oven(as I use it for storage) for baking is a big task but my daughter makes sure that I keep baking once in a while as she loves cake.

Today I had to come up with something with the ingredients in hand and I ended up making this healthy cake with pear fruit , pom juice , flax meal and whole wheat flour as main ingredients.

Let us get started----------------

Dry Ingredients :
--------------------------
Whole Wheat Flour..........................2cups
Flax Seed Meal................................1/2 cup
Baking Powder.................................1tsp
Baking Soda.....................................1/2tsp
Sea Salt............................................1/2tsp

Wet Ingredients :
--------------------------
Pom Juice........................................1&1/4 cup
Canola Oil.......................................1/2 cup
Agave + Raw Agave Nectar............2tbsp + 2tbsp
Pear Fruit.........................................1 finely diced

Garnish :
-----------------
Toasted Unsalted Cashews...............1/4cup
Butter/Ghee......................................for greasing cake pan

Preparation :
---------------
Turn the oven to 350 F.While the oven is preheating let us get the cake batter ready.Grease a cake/loaf pan and keep it ready.In a bowl take 2 cups of whole wheat flour(atta flour).Add baking powder , baking soda and salt and mix well or sift them together so that all the powders mix in well.

Now add the flax meal to the above dry ingredients and mix well.

In an other bowl take oil , agave nectar and pom juice and mix them well with the hand mixer.

Now pour the wet ingredients  into the dry ingredients and blend with the hand mixer.To this batter add the finely diced pears and whisk one more time so that the fruit blends in.
Now pour this batter into the greased pan and top it with roasted unsalted cashews and place it in the oven and bake for 50 to 60 minutes.Each oven is different so check in between.Mine took 60 minutes.
 After 50 minutes test the cake with a tooth pick to see if it is done ,if not continue for few more minutes and check again.If the tooth pick comes out clean it's done.


Take the cake out of the oven and let it cool. It took more than 30 minutes for this cake loaf to cool down.I thought it must be because of the fresh fruit(pear) I used in it.


My daughter couldn't wait so long and made me cut it after 10minutes.It was still hot and moist whereever there were pieces of pear.It tasted very good.Once cooled it tasted more yum.


Note :
------------

1) This cake will  be good for 2 to 3 days if kept outside(without refrigeration) I guess as there are fresh fruit pieces in it.

2) Will surely make it again.Next time I will make it by using pasted pears instead of adding them as pieces.

3) I forgot to take a picture after adding the pears to the batter.You can see that in the cut cake piece there are some white spots, that white spots are pear.

Pom-Agave Whole Wheat Cake(Healthy,Eggless and Low-Fat or No-Fat)

Yesterday I made this cake as my daughter was asking me for a cake since afternoon.She loves cakes and balloons .She would come and ask me every few minutes if I am making a cake.So finally I had to think and come up with an instant cake recipe with whatever I had in the house.I generally don't keep all-purpose/maida flour in the house.You can see that the cake recipes I make are with the regular whole wheat flour we use for making rotis or chapatis.Well , we and our neighbours liked this cake so hope you will like it too.

Again this is almost a healthy cake.I say almost because I used little condensed milk which has more sugars but still I used only 1/4th cup of it.Whole wheat , pomegranate juice, lowfat milk and agave nectar are healthy ingredients .I did not use any oil or butter.All in all I can call this a healthy cake. 

These days I am using my Toaster-Oven for most of the baking instead of the big oven as I use the main oven mostly for storage (as space is a problem and I have few cabinets in the kitchen),so it's hard to take out the stuff every time I need to bake.

As I made this cake as an experiment I could not take pictures of the ingredients in the starting . Let's start making this mini flat cake-------------


Dry  Ingredients :
----------------------
Whole Wheat Flour/Atta..............1cup
Baking Soda................................pinch
Baking Powder............................pinch

Wet Ingredients :
------------------------
 Pom Juice...................................1/4cup
Agave Nectar..............................1/4cup
Condensed milk...........................1/4cup
Milk.............................................1/4cup
Organic Super Fruit Spread..........1tbsp

Toppings :
-------------------
Chocolate Chips.................few for topping

Preparation :
---------------
Preheat the toaster oven at  375 F.While it is pre-heating take wheat flour,baking powder and baking soda in a bowl and mix them well.Now add all the wet ingredients to the dry ingredients and whisk the batter with a hand mixer so that the batter is nice and smooth.


I made the cake in the tray that comes with the toaster oven.I applied 1tsp of oil to the tray and poured the batter into it and spread it evenly and topped it with few chocolate chips and placed the tray in the oven.



After 15 minutes I checked the cake and it was slowly rising and baking.


After another 20 more minutes I checked the cake with a tooth-pick and the tooth-pick came out clean.



I turned off the toaster-oven and took the cake tray out and let it cool.

You can see the back and front side of the cake.This cake is nice and moist and is glossy on the top.


Later cut it into pieces and serve as is or with icecream.This cake looked like brownies after I cut them into pieces.


Note :
--------
1) It took 35minutes for the entire cake to bake.Each toaster oven is different so keep checking in between so that the cake does not burn.


2) As I use whole wheat flour the cake itself looks like a chocolate cake.


3) For us the cake was sweeter(as we eat very less sweet or no sweet,next time I will skip condensed milk and use milk in its place too) other wise the cake is just right for a person who can enjoy normal sweetness.For someone who has cravings for sweet they may add more agave or condensed milk.

4) The organic super-fruit spread I used is from Trader Joe's.It is very low in sugar and is made of grapes,cherries and berries. 

5) Overall this cake is just perfect and will surely make it again.

Apple-Banana-Chocolate----Honey------Walnut-Yogurt-Cake(Eggless)

I have been planning to do this cake for a long time and finally I did it.This is the recipe I came up with....What is this?The name looks like the representation of an alphabet chart. Right ?Well ,A for Apple and B for Banana are really fruits of health and the first fruits kids enjoy from the time they start to eat.So I thought I should start my dessert section with kids in mind even the youngest ones.Also when we think of cake it sounds like a pile of carbs.We can try to reduce that and make it better and healthy.The thought of cake makes us think that it must be made of egg.You are wrong.This is an eggless cake. 


Enough talking , let's get into baking this lovely,kid friendly and health friendly cake.This is how it goes
"A B C-----------Z--this is the cake I would like to eat , mommy won't you make it for me"(sing it like an alphabet song).

Dry Ingredients :
-----------------
Baking Soda....................2tsp
Baking Powder................2tsp
Sugar..............................1/2cup
Wheat Flour....................2cups

Wet Ingredients :
-------------------
Apple Sauce....................1 (4oz cinnamon flavor)
Banana Mashed...............1(very ripe)
Canola Oil.......................1cup
Honey.............................1/3cup
Milk................................1/3cup
Vanilla Essence...............2tsp(pure)
Yogurt............................2cups

I call the following ingredients as Enrichment Ingredients because these both ingredients enrich the flavor of the cake---- as chocolate chips are for the sweet tooth as well as for good health and the walnuts are for the healthy brain and heart(everything in moderation is healthy). 

Enrichment Ingredients :
-------------------------
Chocolate Chips..............1/3cup
Walnuts...........................1/3cup

Preparation :
-------------
First , Place a rack in the center of the oven and preheat the oven to 350 degrees F.

While the oven is preheating, take a large bowl and sift 2cups of wheat flour , baking soda and baking powder together.

In an other bowl take all the wet ingredients and whisk them all together with a hand-mixer.Now add the sugar and whisk it well till they all blend well.

Now add the whisked wet ingredients to the sifted dry ingredients and mix it well with the hand-mixer and make a nice batter.Now add the chocolate chips and walnuts to the cake batter and fold them in nicely.

While you are you can take help of your kids in getting the baking pan ready.I used muffin pan and a loaf pan to bake.So my 3yr old helped me by lining up the muffin tin with paper cupcake liners and my 6yr old helped by lining the loaf pan with a parchment sheet .

Once my cake batter was ready I filled all the compartments of the muffin pan and poured the remaining batter in a loaf pan.

My oven is preheated ,in goes the muffin tray and the loaf pan.I set the oven timer for 30minutes.The baking has started.After 15 minutes I opened the oven door to check how the process is going on. If you open the oven door during baking process make sure that you increase the oven temperature by 5degrees F(i.e. 355degrees F) for the rest of the 15 minutes.

                                   

Once the timer sarted(30 minutes completed) to beep, I checked if the cake in the muffin tray and loaf pan is done or not by priciking it with a tooth pick and the tootht pick came out clean.So I switched off the oven and took the muffin tray and loaf pan out of the oven and let it cool.The cake has puffed up well and looks very yummy and attractive.Once they cool down the muffins and the loaf of cake come out very easily without disturbing the shape.


Finally, the yummy Apple-Banana-Chocolate-----Honey------Walnut-Yogurt-Cake is ready.

Notes :

1)Kids & Adults can equally enjoy this cake.

2)Just FYI , I wrote all the ingredients in an alphabetical order.

3)This cake is not too sweet, it is just right.(If you want it to taste more sweet like  the cakes from the  bakeries you can add more sugar.)

4)Nothing in this world is 100% perfect.Same way I feel that a Dessert(as it is a sweet dish it sure has high calories)can't be 100% Healthy---but we can substitute healthy ingredients while making the dessert and make it  right.

 For example in this recipe, I used healthy ingredients like

1)Wheat Flour(instead of All Purpose Flour)
2)Canola Oil(instead of Butter)
3)Yogurt(instead of Eggs)
4)Honey(to lessen the usage of sugar)
5)Walnuts( for good heart & brain health )
6)Banana( rich in phosphorous)
7)Apple Sauce(not only a comfort food but also protects against breast cancer)
8)Chocolate Chips(are very rich in copper,magnesium,calcium and minerals---only if taken in moderation)

So all in all we have made ourselves a healthy cake.We can eat a piece for morning breakfast too.(You can serve this with ice-cream or with caramel sauce.Use your imagination there are many possible ways)You know we are trying to keep it healthy.So enjoy it just by itself.
