Pear and Pom Whole Wheat Cake(Eggless and Vegan)

This yet another healthy cake with whole wheat and as usual eggless.Again thanks to my daughter for being behind me till I made this cake.As I mentioned earlier clearing the oven(as I use it for storage) for baking is a big task but my daughter makes sure that I keep baking once in a while as she loves cake.

Today I had to come up with something with the ingredients in hand and I ended up making this healthy cake with pear fruit , pom juice , flax meal and whole wheat flour as main ingredients.

Let us get started----------------

Dry Ingredients :
--------------------------
Whole Wheat Flour..........................2cups
Flax Seed Meal................................1/2 cup
Baking Powder.................................1tsp
Baking Soda.....................................1/2tsp
Sea Salt............................................1/2tsp

Wet Ingredients :
--------------------------
Pom Juice........................................1&1/4 cup
Canola Oil.......................................1/2 cup
Agave + Raw Agave Nectar............2tbsp + 2tbsp
Pear Fruit.........................................1 finely diced

Garnish :
-----------------
Toasted Unsalted Cashews...............1/4cup
Butter/Ghee......................................for greasing cake pan

Preparation :
---------------
Turn the oven to 350 F.While the oven is preheating let us get the cake batter ready.Grease a cake/loaf pan and keep it ready.In a bowl take 2 cups of whole wheat flour(atta flour).Add baking powder , baking soda and salt and mix well or sift them together so that all the powders mix in well.

Now add the flax meal to the above dry ingredients and mix well.

In an other bowl take oil , agave nectar and pom juice and mix them well with the hand mixer.

Now pour the wet ingredients  into the dry ingredients and blend with the hand mixer.To this batter add the finely diced pears and whisk one more time so that the fruit blends in.
Now pour this batter into the greased pan and top it with roasted unsalted cashews and place it in the oven and bake for 50 to 60 minutes.Each oven is different so check in between.Mine took 60 minutes.
 After 50 minutes test the cake with a tooth pick to see if it is done ,if not continue for few more minutes and check again.If the tooth pick comes out clean it's done.


Take the cake out of the oven and let it cool. It took more than 30 minutes for this cake loaf to cool down.I thought it must be because of the fresh fruit(pear) I used in it.


My daughter couldn't wait so long and made me cut it after 10minutes.It was still hot and moist whereever there were pieces of pear.It tasted very good.Once cooled it tasted more yum.


Note :
------------

1) This cake will  be good for 2 to 3 days if kept outside(without refrigeration) I guess as there are fresh fruit pieces in it.

2) Will surely make it again.Next time I will make it by using pasted pears instead of adding them as pieces.

3) I forgot to take a picture after adding the pears to the batter.You can see that in the cut cake piece there are some white spots, that white spots are pear.

  19. Dear MD thank you for liking this cake.You can surely use other alternatives like dates paste or honey if you don't have agave nectar.They are all good substitutions for sugar.
